My question to you is: how feasible is this? Can an average person install such a device with a minimal amount of cursing? Anyone with experience on these puppies?

Here's their page on installing a garbage disposal. It even has a video... http://www.diynetwork.com/diy/ diy_kits/article/0,2019,DIY_13787_2311219,00.html Hope that helps.

But then again I have a tract house (can you say cheap? 2x4 exterior walls only 8 3/4" poured concrete, grumble) Also are you going with a Batch Feed or continuous garburator? Batch Feed's are easy to install. Also how comfortable are you installing a light fixture? If you're comfortable with that you should be fine installing a batch feed garburator.
