May be missing a couple in there.....

So the Baby swap is a great option to use if you want to get on the big rides like darcy mentioned above.

They must have a policy on which ones are okay. That way you won't have to guess, and you won't wait in any lines only to get up to boarding and find out they won't let you on. The first time I went to DL with my now-spouse, I wrote directly and asked which attractions would not fit someone 6'7" (as he is). I'd never had to deal with that, being only 5'9". They sent me back a full list, and even found a 6'7" cm who ranked them all for "no problem," or "tight squeeze but doable" and etc. They even sent us, in the days before fastpass, an "enter through the exit" front of the line pass for Indy, which was new then and had 2-3 hour lines, which was pretty awesome - just for making the inquiry.

On the carrousels she had to be in front of me with the belt around just her. (Hint: wrap the belt around the pole 1 or 2 times to be able to make it tight enough.) Nothing at Disneyland is for sure cuz it can be at the discression of the CM. Dabob's advice sounds good.

There was only the one address for DL then, IIRC, which was "Guest Relations, Disneyland, 1313 Harbor Blvd., Anaheim CA." That may have changed since all the 2001 changes, however. I think if you go to their website, you'll probably find a link for questions. And if you go to the website and act like you're looking for a hotel/park package (the "find a vacation" offer section; you don't actually have to be looking to do that; you can just go through the first couple of steps), sometimes a pop-up window pops up with a live person asking if they can help you. Can't guarantee that will happen, but it might.
