So my question is: what kinds of souvenirs do they sell, and what (fairly small and inexpensive) things should I be asking for.

Are there keychains and pins commemorating the inaugural year?

Are there tins for sale (my favourite souvenirs from TDL)?

Any fancy postcards I should specifically request?

    Yes.

Yes - very similar to TDL's.

I am not normally a souvenier person, but I bought tons of stuff when I was at HKDL. It all seemed wonderful to me, and I was surprised that most of it was rather reasonably priced. I think your boyfriend will have a wide selection of good choices.

For the kids... HKDL specific potato head pieces at the Potato Head station at Buzz' gift shop are fun and inexpensive to collect.
