I've been offered and accepted a full-time job after 6-8 weeks of searching, applying, interviewing, etc.

My question is what is the best way to follow-up to those others potential employers who I've contacted and interviewed with... some have been 2nd interview appointments, as well as general interest follow-ups.

What would be the best way to let them know I have accepted another position, and yet be thankful and professional bor their time?

I definitely don't want to simply vanish, even though that might be the way I have been treated by potential employers.

Great job all around!
