Not having children around I guess the biggest benefit is you can do things at your on pace, and only things that you feel like doing. I'm assuming you have never experienced WDW without children in tow. My suggestion is to think back to those times, and try to recall what you really wanted to do, but couldn't because you had kids with you. You can do absolutely anything now that you will be taking an adult only vacation.

And demand front row seats for RnR or TestTrak or EE or SM and back row on Big Thunder. Try to make reservations at the restaurants that your small ones would not choose. Will you be attending during the Wine Festival? Take the time to visit the Resort Lobbies. Downtown Disney has that new giant tethered helium balloon Characters in Flight. And Raglan road has night-time entertainment. ALso the unique back-stage tours I am guessing some are adult only.

Personally, I love going to Jellyrolls at the Boardwalk, or a round of minigolf at WinterSummerland. 3-Watch Wishes from the Poly beach. This is the only way I enjoy the show anymore. You can sit on a beach chair or a hammock and watch the show without the music blaring in your ears. Especially good if the music annoys you as much as it does me. 4-Personally, I'd go to Universal for a day, but that's just me.

I'd also suggest finding a couple that have children throwing a temper tantrum, be glad it's not you, and then buy them a round
