Based on your schedule I would pick Saturday, unless you are arriving Wednesday, in which case, Thursday would be better. Note, Early Entry would be at 8 AM on Thursday, since Disney recently added an extra hour to the weekdays, with public opening at 9 AM instead of 10 AM. Saturday would be at 7 AM. You should get there about 20 minutes early to get processed and let into the park.
