As for "in the parks", they used to have veggie stands in other parks but I've not been there for a few years so perhaps that has changed??

Disneyland does sell fruit and you can get it all over the parks at the outdoor vending carts. I believe you can probably get fruit in all lands. There is also larger places with more of a selection such as the Main Street Fruit Cart on Main Street , in Toontown at Toon Up Treats and the stand in Adventureland near the Jungle Cruise. The bigger stands sell individual apples, oranges, bananas, apples with caramel sauce, strawberries with a chocolate dipping sauce, containers with pineapple spears or grapes or watermelon or mango slices and big dill pickles. I have seen cut up veggies like carrots and celery at a few of the places selling fruit. You can get pineapple, pineapple juice and dole fruit bowls at the Tiki Juice Bar in addition to dole whips. It certainly isn't cheap but I give them credit for having it available. In Disney's California Adventure, there is not as many outdoor vending carts selling fruit but I know that they sell fruits and veggies at the Fairfax Market in Hollywood Studios Backlot and at a stand near the Farmer's Market. A lot of the restaurants have big salads and even a lot of the cafeteria/counter type places sell side salads and fruit salad. Have fun!

They have many fresh veggie/fruit options for a lot cheaper than they offer at the parks. When I ordered they even had organic options! We threw some oranges and apples in our bags at the begging of the day and had snacks at the ready when we needed them ;-)
