Traditional ratatouille is a vegetable stew, and I think a lot of guests who saw the movie would be surprised or disappointed. Maybe that's why they don't serve it. Or maybe it just never crossed their mind.

And note that if you call it by a French name, it's always going to sound fancier than it actually is. Even if (to paraphrase an old Steve Martin bit) it involves covering a shoe with cheese, and shoving it down your throat.
