I would do Soak City and have dinner at the Mrs. Knott's Chicken Dinner restuarant one day, and then do Knott's Berry Farm on a different day. If I got there a opening, I think I could get everything done by 6 or 7 PM, which would allow an evening at either Medievil Times or the Pirates Dinner Adventure.

But if you have older kids then you could avoid that area. One thing to consider if you are unable to expand the duration of your trip is how late will the park be open. This may influence your deciosn to spend a portion of or an entire day at the park.
