    I added drinks because I'm always looking for different holiday drinks alcohol and non-alcohol types. Especially punches and hot drinks for kids.

    Cream butter and sugar until light and fluffy. Stir in flour and salt until dough is firm and evenly combined. Press dough onto bottom of a 15 x 10-inch jelly roll pan. Bake at 325 degrees for 15 to 20 minutes, or until crust is light brown. Cool.

    Filling:
    Spread raspberry jam over cooled crust. Whip egg whites until foamy. Add 1 cup sugar slowly and continue whipping until soft peaks form. Fold in vanilla, ground almonds and melted chocolate. Spread evenly over raspberry jam. Bake at 325 degrees for 20 minutes or until chocolate layer is set. Cool completely.

    Topping:
    Melt 2 cups chocolate chips in a double boiler or microwave. Pour over 1 cup butter. Stir until butter is melted and mixture is smooth. Spread evenly over baked chocolate bars. Sprinkle with 1 cup tasted sliced almonds. Refrigerate. Cut into bars once chocolate has set.

    Note: This is a very rich and decadent dessert.

    Toffee Surprise

    35 Keebler Club crackers (or Waverly Wafers or any other square buttery cracker)
    Pam vegetable oil spray
    1 cup butter
    1 cup sugar
    1 16-ounce package chocolate chips
    1 cup ground walnuts or almonds

    Preheat oven to 400 degrees. Line a jellyroll pan or cookie sheet with aluminum foil placed shiny-side down. Spray with Pam. Line pan with crackers in a single layer, sides touching.

    Combine butter and sugar in a small saucepan. Bring to a rolling boil, stirring frequently, and boil for 2 to 3 minutes, until mixture is thick and fluffy. Pour over crackers.

    Bake at 400 degrees for 6 minutes. Remove from oven and cool 1 minute. Sprinkle chocolate chips on top and let melt a few minutes, then spread evenly. Sprinkle top with nuts. Chill. To serve, break into pieces.

    In a medium bowl combine flour, baking soda and salt. Set aside.

    In another bowl, combine butter and brown sugar. Blend until smooth. Add eggs one at a time. Then vanilla.

    Slowly add in flour ingredients. Then slowly add in oatmeal/cinnamon ingredients.

    Last, add chocolate chips by hand.

    When combined, batter will be dense and thicker.

    These cookies do nicely if you make them larger -- like a soup spoon to scoop them onto the cookie sheet.

    Bake 8-10 minutes.

    Great with a glass of milk, and fantastic with coffee in the morning.

    I've used butterscotch chips, dark chocolate chips, half white sugar, half brown sugar -- so have fun with this recipe, and your own favorite chips.

    Mix all ingredients and freeze in a rectangular container. Pour 2qts of lemon lime soda and ginger ale in a bowl. Then using an icecream scoop scrape the frozen mix in the bowl.

    You can also just keep the mix in the freezer and scoop it into cups pouring the soda over it and mixing in the cups. This is a good alternative if you don't want the punch to melt sitting in a bowl.
