I schedule my dining because that is a big plus if you really want to visit your favorite restaurants. I also schedule FP+, but usually don't use just as many as I use. If my day goes a different way than I anticipated I'm not about to run through the parks to make a FP time. I have "like to do" attractions but really no "must do" attractions. I always figure if I miss something I can catch it on my next visit.
