There are certainly choices you can make that will be lower in calories. You are on vacation though, and I think it is okay to splurge a little on eating then instead of worrying about the calorie content. By purchasing the dining plan I feel I will really be saving on character meals, etc. I think the dining plan seems like a bargain if you consider that.

The biggest question for me, usually, is "Can I eat all the food available to me on this plan?" - and usually the answer is no, so I get to be nice to some random folks in the hotel food court when I'm checking out. hehe

We talked about a few things I can do to exercise while i'm there. Swim, bike ride and most of all walking. I just need to learn moderation. Kind of hard on the dining plan but I just need to stop eatting when i'm full.

That'll help stretch out your eating time and let your brain tell you a bit quicker when you're full. Then again, you may not want to spend that much extra time at a table instead of out in the parks having fun. hehe
