Betty Crocker Cookbook circa 1976

    Thanks so much for any help. I've searched various recipe websites and couldn't find a recipe that fit, hope my memory about the cookbook is right so I can end the search.

    I have this one from BH&G around the same time, though:

    CHICKEN BREASTS WITH ORANGE GLAZE

    4 boned chicken breasts
    4 tbsp. butter
    1 med. onion, minced
    1/2 c. frozen orange juice concentrate
    2 tbsp. brown sugar
    2 tbsp. chopped parsley
    1/3 c. water
    2 tbsp. soy sauce
    1/2 tsp. ginger
    1 tbsp. grated orange peel
    1/2 tsp. paprika

    In a saucepan, saute the chicken breasts in the butter until browned. Then remove the breasts from the pan when cooked and set aside. Place the onion in the saucepan or fryer and saute until wilted. Then add in the orange juice concentrate, brown sugar, water and parsley. Let the mixture cook a bit and then add in the soy sauce.
    When the mixture thickens, add in the ginger and orange peel. Return the breasts to the pan and cook until heated through. Serve each breast with a bit of the orange sauce. Garnish with a sprinkle of paprika. Serves 4.

    Under the poulty section the only thing that comes close is Duckling A L'Orange and Orange-braised Duck.

    Under Main Dishes there is Pork Pot Orange. Among all the chicken dishes there are none that call for orange juice.

    Nothing under Soups and Stews either.

    I double checked the index under "chicken" and "organge" but nothing is listed.

    It has chicken and orange concentrate and the Google thread I followed said it was a Betty crocker. But it doesn't sound right, too simple.

    but all of those have orange juice but dont say anything about concentrate.

    Super Orange Chicken

    Rated: 4 out of 5 by 2 members Prep Time: 20 Minutes
    Cook Time: 45 Minutes Ready In: 20 Minutes
    Yields: 4 servings

    " Orange and onion seem strange bedfellows, but they sure work well together in this simple baked chicken."

    INGREDIENTS:
    1 (6 ounce) can frozen orange
    juice concentrate, thawed
    1 packet dry onion soup mix 1 teaspoon poultry seasoning
    1 tablespoon cornstarch
    4 chicken legs

    DIRECTIONS:
    1. Preheat oven to 375 degrees F (190 degrees C).

    2. In a medium bowl, combine the orange juice, onion soup mix, poultry seasoning and cornstarch. Mix together well and set aside. Place chicken in a 9x13 inch baking dish. Pour sauce over chicken and cover with foil.

    3. Bake at 375 degrees F (190 degrees C) for 45 minutes, remove foil, and bake for 15 more minutes.

    Thanks so much you guys. I guess it wasn't in that red cookbook which is probably why mom no longer has the recipe. It was probably just on a 3X5 card which got lost somewhere in our 25+ moves.

    I'm a Better Homes and Gardens kind of guy. I'll check that red-gingham-covered classic when I get home.
