All the coverings, treatments, etc.. are covered by people specifically specialized in those types of fabrications. Most of what we think of as "Disney" is glued ontop of a fairly uninteresting cinder block building. WDW has a place on/near property known as "Constractors Row" where many companies have little field offices of sorts and shops. They essentially just service WDW, along with Disney's own construction company. As needed, they contract out and thus hire more people. Specialized projects go through a whole bid process - various companies price it out for labor, materials, etc.. and Disney picks who they want to actually come in and do the job. Between modern hotels, casinos, other parks, educational/museum facilties, etc.. there's lots of work for these sorts of companies. Take Innoventions in Epcot for example - Sparks Exhibits (a company in Orlando) does all the "neat" stuff we'd think of when we think of the attraction. The construction company runs conduit for power, builds walls, does demolition work, and water and such.
