I know that sometimes changes to hours don't get reflected, and it takes a week or two for changes to make the guide, so it is not perfect. But it is pretty good, and is what the CM's use to give out the info. But the best bet for table service is the Disney Dining phone number, 714-781-DINE. But if the restaurant doesn't take reservations, then you will get the info straight out of the CM Reference Guide. For example, the CM Reference guide shows the Rancho del Zocalo is open from 11 am to 9 PM daily this time of year.

As for those who take reservations in the park, not much. The Blue Bayou, Breakfast at the Plaza Inn (Character meal), and the Fantasmic! Dessert and reserved seating. At DCA, you have the Vineyard Room, Wince Country Trattoria and the Ariel's Grotto Character Dining. Most of the Hotel Restaurants are also part of the Disney Dining reservation system.
