For example, we had to cancel one sit-down dinner so we needed to find another at the last minute (for a different day)(we were on the meal plan and didn't want to waste it!!). We called dining and said "we need a sit down breakfast somewhere tomorrow" and they looked through everything and gave us options. If you're willing to eat at slightly off times or go to a little more obscure places like resort restaurants, you will still have options. Have a GREAT time! We had beautiful weather last year, the crowds were manageable, and the decorations were amazing!!

I called in the late afternoon, and was told that most folks call first thing in the morning as soon as their booking window opens. So I say again - BOOK NOW!!! And then be willing to eat a late lunch or a later dinner, and be open to some of the terrific restaurants in the hotels or in Downtown Disney.

Your posts made me feel very lucky!

Great food (albeit somewhat pricy), great service, and a wonderful, totally unique dining experience "under the seas"! It's one of my favorite restaurants in WDW.
