I was watching the WDW feature on Travel Channel and when they showed the bit on Turtle Talk he did choose a child wearing orange...maybe there is something to wearing a bright obnoxious color. Altho, my son was wearing navy blue when he was chosen..but I'm sure the birthday button had something to do with it.

Mostly the actor has a joy stick to move the direction of crush on the screen and buttons to do the flips and other extra actions. The system also animates the lips with the actors voice.
