Because in the case of roller coasters, speed can be affected by the weight of the train... and also the temperature of the wheel bearings and the track. In the morning, when the ride is "cold," so will the bearings and track. That means slower. The difference would be small, but measurable.

Which just shows you how quickly a truth can become an urban legend. (For example, some rides on rails DO go faster at night but most DL will not, there IS a basketball court in the Matterhorn, but it's half-court, and there aren't thousands of feral cats but there are definitely cats).
