Had he used an LDS term he would have reminded them that he is different from them. "Pastor" makes it sound like they are members of the same club. Pastor reminds me of the guy in the little church on Little House on the Prairie. A bishop sounds like an executive. Given the time constraints, it was a shorthand way of describing his position in the church. Mormon terminology is a little off the beaten path for most Americans. "Elder" sounds again like some big muckety muck. Maybe because it started off as a small church they felt it necessary to give important-sounding titles to members.

He didn't use any of the other words to describe what he did - he used a word that was targeted to appeal to a particular demographic. He could have said bishop, and it could have been an educational moment for the people who don't understand the Mormon hierarchy. There could have been a footnote or column about what that means. But instead of standing up and accurately describing his title, he hid it. I've never heard a religious leader from another faith describe themselves as anything other than the title they actually held.
