I suspect that the hotel bars probably stay open until around midnight (though recent encounters at the DLR hotels would indicate they close much earlier), but other than that, I think most things are closed by 11.

I've never found there to be a lack of late-night things to do at WDW. I don't miss the old Pleasure Island a bit... I always found the place over-priced and over-crowded.
