    Supposedly, "geminus" is the singular
    "gemini" is the plural
    according to one source.

    But it varies. So I don't know what to think anymore.

    This is what I think I know.

    Geminus = male twin
    Gemina = female twin
    Gemini is plural = twins

    However, concerning the astrological sign, while depicting twins it is a singular sign. Thus a person born under the sign is a gemini and plural of a gemini is geminis (leos, capricorns, etc.)
