The poinsettia's changed for other flowers throughout the resort, then some of the trimming on the buidlings on Main Street. The noticable "undecorating" is when the tree comes down, and the garland over Main Street.

But, like the rest of the world, at Disneyland Resort the Christmas season has been stretched to cover more than a month. The fireworks and snow begin daily starting November 12th (could be the 11th?) and I would guess that the majority of decorations will be up by then. It's a process, not an overnight deal, but you'll probably see decorations if you're there after then.
