There are also some places on attractions where you can turn around and see backstage, or the obvious ones, take the Monorail (or train) and get photos from there. One they figure out where they can be found though, it might be easier to find the rest. You could also go for the mountain range that includes the Matterhorn. Have some contests for the best picture, where everybody votes on the winner. You could do things like "what looks like it doesn't belong in Disneyland" or "magical events" or stuff like that.
