The times we've been at WDW over Thanksgiving (3 trips) we always went to MGM on Thanksgiving Day. Between the Thanksgiving dinner at the Hollywood Brown Derby and the premier of the Osborne lights, we always felt putting up with the crowds was worth it.

If you don't have to do a PS, then go to both parks and check them out and get a feel or just get a feel the day before to see how crowded all the parks are. The CM's are very helpful.
