    Suggestions? Recipes?

3 15 oz cans kidney beans, drained
    2 lg chopped yellow onions
    2 chopped green peppers
2 lbs xtra lean ground beef
2 16 oz cans of chopped tomatoes
2 8 oz cans of tomato sauce
    1/4 tsp paprika
    2 crushed bay leaves
2 Tbl chili powder (I always use Eagles)

Spray a large kettle with PAM (I actually use olive oil in a spritzer I got from Pampered Chef) and brown the meat. Put everything else in, cover and simmer for about an hour.

It tastes even better as left-overs!

I'll try to come back with some other recipes when I have time. I have a really simple lasagne that's pretty good I'm told. The only other suggestion I have is to try Stouffer's Skillets. We don't have them all the time becaue I think the sodium is kinda high but they are great in a pinch. I think the Grilled Chicken and Vegetables, Garlic Chicken are the best. The teriyaki and the broccoli beef ones were gross. I haven't tried the others.

The websites are a good idea. And I know there are all kinds of "30-days of freezer meals" type cookbooks now but I like to get "tried-and-true" recipes friends have already tried myself.

Thanks for starting this thread! I think we'll all benefit. :)

I will make up beef stew but leave out the peas and partially cook the potatoes (otherwise they can be mushy). After defrosting, I toss in frozen peas before cooking.

OK, so chili is a good one for us. Lasagna & meatloaf......ok do I fully cook these and then I am basically reheating them? I guess I can also make an extra batch of meatballs and freeze those up too.

goodgirl......care to share your enchilada recipe? :)

    Some things I remember are:

*Meatloaf (cooked thoroughly so you just have to heat it up)
    *Chicken Caccitore (sp)
    *Macaroni & Cheese
    *Spaghetti pie
    *Shepherd's pie

Also, we used to roast six or so chickens and then freeze them individually in a ziploc bag. You can either heat up the chicken as is or take all of the meat off and freeze it to use for something else like chicken cassarole.

If you'de like....I can hunt down my recipes and mail them to you.
