Well, it wasn't really until 1926 that Canada was considered a full soveriegn nation when it was recognized as a country by signing the Treaty of Versailles. My Canadian history is really bad, so I appoligize in advance if any of this is wrong. Anyhow, my question was which if any of those dates does Canada Day celebrate? Or is it more of a day to celebrate the "process" of soveriegnity?

The process was very gradual, ending with a completely independent legislative body and prime minister, but loyal to the sovereign.

Canada Day specifically celebrates July 1, 1867 when the three colonies of Canada were united and made into one country with four provinces. An important step along the road to an independent government.

Did I get it right Canadians?

x_PP_x may rule at Disney trivia (and she probably is a mean hand at any trivia game), but I'm a force to be reckoned with when it comes to history! (Especially when I can get to wikipedia!)
