The two lost vans are named Minnie and Van. Lightning Mcqueen's tires are from the company Lightyear, an obivous reference to Buzz Lightyear from Toy Story.

And I *think* I saw the Pizza Planet truck outside the stadium as they were panning into the big race at the end (if it was the Pizza Planet truck he was in a crowd and was on the far left of the screen). Oh, and the Apple logo was pretty prominent in the background in one of the "backstage" scenes.
