Most think EPCOT isn't fun for kids, but at age 7 my son loved it, but that was mostly for Test Track and Mission Space. If they love animals Animal Kingdom might be a good bet, but Disney Studios has Star Tours and Toy Story and Muppets. Conventional wisdom says Magic Kingdom is the best park for kids of that age. My suggestion if you have time is one day per park with a second day for EPCOT if you want to see and do it all there and then let the kids tell you which park or parks they want to do again.
