There was more space in WDW, which allows their tracks to be slightly more spread out, where DL's are more tightly wound. Rainbow Ridge is a little set piece that is more of a nod to a former Frontierland attraction (Mine Train) than something essential to Big Thunder. If the little town can be moved, altered or replaced with something better, why shouldn't it be? If it were farther away from the track, the illusion would work better anyway. Right now, it's "Why are we rolling past a miniature sized western town?"
