A cast member will pick the appropriate one for each vehicle. From what I have heard and from what others have said there is a great number of saying to pick from. The doors are really video screens, which look like they open when you go by. Each one features a different video scene from the movie.

That would make sense. I went on the ride by myself. I sat in front and Roz said,"young man in the first row, I'm free after work!". There was no one else in the vehicle, and so she did not address the empty seats.
