At the end of the cruise all charges to your stateroom are put on the credit card you provided. My guess is that to use your gift cards you would have to stop by Guest Relations during the cruise and have them applied as a credit to your account.

You can even stop by guest services once or twice during your cruise to check your balance and pay gift cards towards the balance. Be careful, though. We put down another $100 card thinking we would spend at least that and ended up spending like $86. They didn't give us credit back (we should have asked in the first place.)
