I saw a picture earlier this week of a new sign on the construction walls outside the future princess meet & greet (former Snow White ride), featuring the faces of the princesses you could meet there: Snow White, Cinderella, Jasmine, Aurora, and Tiana. Notably missing from this sign was Rapunzel. I can't imagine that they wouldn't have a place for guests to meet her, as she's the newest princess and very popular (and centerpiece of a big marketing push). My guess is there will likely be a nice little corner where you'll be able to meet her, but not a full-scale indoor meet & greet with a proper queue and all that. She'll likely be around, but less reliably than the ones being kept in the stable on the other side of Fantasyland.

Even though her tower has been removed, she is still greeting lines of guests in the former Gepetto's Toy Shop. Of course, once the new Fantasy Faire next to the castle is finished, she will be pulling up stakes and headed over there. And maybe we will get the Fantasyland Theater back for a new live stage production.
