I think it is a great time to go. 90% of the holiday stuff is up by then, if not all of it, and the Christmas parade begins that saturday. The disneyland.com website will have information on what rides will be down when you get within a few months of the date. The crowds aren't too bad either. I hear they start getting crazy that wednesday before and thru the Thanksgiving weekend. But the weekend before is not too bad.
