As far as must-see stuff, aside from the attractions, the Christmas parade is a tradition for me; I would definitely suggest you see that on Christmas day. Also the fireworks. Fantasmic! should be on your list as too. I think one of the guided tours might be worthwhile as well, or if you can't do that, take them through the Disneyland history museum in the Opera House in Town Square, main Street USA.

The places inside the park to make PS are Carnation Cafe, Plaza Inn character breakfast, Cafe Orleans and Blue Bayou. I would probably pick CC for breakfast and then grab a snack at lunch and have a nice dinner at BB! You don't have to give your credit card or anything for PS and can cancel but at least if you have them and want them, they are available! Have a great time! I love the holiday at Disneyland esp. Small World and Haunted Mansion!

We had my son-in-law in a wheelchair due to recent surgery. He wouldn't have missed it. We went in the frame of mind knowing it would be crowed and exercised a lot of patience. We got us and our 5 adult kids on Splash Mountain and bought the picture. It was dated "Disneyland 2001" for a wonderful momento. Smile and say Merry Christmas to passersby and CM's. If I had to choose one of my Disneyland visits to remember it would be Christmas Day 2001. BYW: We went early on Christmas Eve and the park was almost empty until noon.
