Grandpa would be happy with ham, every year, maybe a turkey to mix things up. But he's not the cook. The other family members like to mix it up more so they have also had lasagna and pork roast. This year, most of the fight was about whose house it would be at, and I don't know about the food. Unfortunately, 3 years ago, DH's cousin was killed shortly before Christmas in an avalanche and her parents have had a hard time during the holidays and didn't want to do the "traditional Christmas at Grandpa's." Grandpa thinks every year will be his last, at this point, and wants to do the "traditional Christmas at Grandpa's."

Do you have the 2nd edition of the LP cookbook, my recipe for them is in there. Or I can post when I get home as I have no clue what my quantities are off hand. A dash of this and a dash of that. I'll have to think about it or get the recipe from what I put in the book. LOL! It's just flour tortillas, I use Las Palmas enchilada sauce, cheddar and monterey jack cheese, sauted yellow onion and black olives. Squish it all together and bake.
