Star Wars would be OK, but Harry Potter (I know... barely meets the definition of fantasy) is probably more accessible to people who are not fans of the genre. I would choose "Harry Potter and the Prisoner of Azkaban"... more adult in tone than the first two, and not nearly as dark as the final five. Of course you could always go with an oldie but goodie (I think) that most women tend to like... "The Abyss". Remember... this is VALENTINE'S DAY. The point is not to see how far you can push your wife in trying to please you. It is to have her enjoy something while still feeling she is doing it to make you happy.

The filler material is dull and pointless, and if Tolkien was alive he'd probably be furious at how they mangled The Hobbit. After seeing the first Hobbit movie on DVD I won't be bothered to see the next two.
