    Now, if you don't know what canela is, it's a cinnamon tea. I got my "canela" pot from my mom for Christmas, and I finally made some tonight.

    You boil water in a stove-top-safe carafe of water. When it comes to a rolling boil, place 2 small or 1 large cinnamon stick. It has to be good-quality cinnamon, and it has to be full stick. Let boil for a couple more minutes, then turn off the water. Let seep and cool.

    Every time you want a cup:

    Bring to boil. Put a cup of cold water into boiling pot. Bring to boil again. Pour canela into mug, add sugar to taste, then add milk. It's a nice, sweet, warm drink. Perfect with pan dulce (Mexican sweet bread). My mom adds some instant coffee to the boiling hot canela before adding sugar and milk.

    The pot I made today was the MOST PERFECT pot I've had since I was little and my great-grandma made it for me. Now I need to hit a panadería for some pan dulce. :)

    The water should be a deep reddish brown.

    Throw out and make another pot when the water is no longer that deep red color, or the cinnamon starts to look icky.

    I do a lot of slow cooking when it starts getting cold and nothing beats the aroma of nice stew or chowder simmering on a cold day.
    hot chocolate with schnapps is a fav

    I love homemade tortillas but those are not a winter only food for me. We have those ALL the time. (yay!) My freezer is stuffed with tamales right now. (yum!) But now this thread has me tooootaaally craving sweet tamales.

    Aside from that, some of my winter comfort foods include pumpkin pie, eggnog, mashed potatoes, hot, fresh bread from Great Harvest and oranges. Yep, oranges. I love having good oranges around Christmas. It's a little tradition we have.

    This year DH talked me into starting a new tradition so he could make sure he gets one of his favorite comfort foods every Christmas Eve - Shepherd's Pie. (Not traditional Shepherd's Pie though, chickendumpling-style Shepherd's Pie which is a snap to make.)

And another favorite is chicken and dumplings! Yum! And at Christmastime...Panetonne and Pumpkin Pie! And Egg Nog! In the evenings we like tea. All kinds. Good ol' Lipton with lots of honey and fresh lemon squeezed into it is great when you have a bad cold. But just to snuggle down into a blanket and enjoy the evening with a cup of hot tea does it for me. Earl Grey, Chinese (Oolong?), Camomile, Peppermint, Green Tea with Citrus, Tension Tamer...they're all good. Maybe I should try Pirate Princess' Canela recipe.

    She used to make them all the time, but since she hurt her arm several years ago, she only makes them a couple times a year.

This recipe is best if made ahead of time and refrigerated overnight before baking it in the oven.

You take a couple of cups of rice, add about five quarts of water and chicken broth, bring it to a boil and then reduce the heat and cook it for a couple of hours. I like to add chicken, bok choy, green onion, sesame oil, but you can put in just about anything you want. Very cheap to make, and rib-sticking good!
