Folks will be done eating dinner 2 and a half hours before the show starts. I guess that's what they do at the Studios in WDW for Fantasmic!, but none of those restuarants are very close to the amphitheater so it makes a little more sense that way.

The post is off on a couple of details-- we are waiting for the Resort to send out the official word. So that's why I asked. Even over at that other site (where this originated) they stated this was coming from an operator reading from notes. But it is largely correct, so it's all good!
