    EXCEPT this year where we will be in DL and the Napa Rose will cook it for us! :)

    Yep, great way to have really juicy breast meat. I've cooked it both ways but now I usually cook stuffing on the side for safety reasons.

    Also, this is our last year to buy one of those birds from a ranch where they are crowded and ill cared for and full of antibiotics and other chemicals. Next year we are going to find some heritage turkeys, raise and butcher them ourselves.

    The first time I ever prepared a turkey was kind of traumatic. Pulling out the guts, rinsing and drying it, rubbing salt on the inside, oiling up the outside, bending the wings under...I think there was even a couple of stray hair feathers on it so I had to pluck those. I did all of this early in the morning. Blech.

    But it sure smells good while it's cooking, doesn't it? :-D

    My favorite turkeys are done in the big electric roaster pans. Cook time is almost 1/2 and there is no fuss at all

    We both like crispy stuffing so we do that separate
