My mom used to fry porkchops when I was little...actually chicken-fried pork chops was more appropriate since she would flour them and then fry them. They didn't keep it in the fridge, either. They had their own little botox factories going. The only thing I can figure is that the act of frying at a high temperature killed anything that might have been growing in it. I really can't remember when she stopped doing it. But I'm glad she eventually did.

In addition to all the things mentioned earlier by folks, my mom used to make buttermilk cornbread in an iron skillet. While the oven was preheating, she'd put the skillet in the oven, get it nice and hot and then take it out, pour in some bacon grease and then pour in the cornbread batter. The flavors all fused together was fabulous. I can still taste it today. Yummmm....

Luckily, she no longer comes over to fix us breakfast ( it is a long story as to why she continued to do this way after the time she was watching the kids). For a long time, my kids thought I was mean because I wouldn't let them have anything " good" for breakfast. Well, at least not all of the time. We've had many conversations on healthy eating and now they understand. My family used bacon grease ( kept in the frig) for green beans and enchilada sauce.
