Several problems with that suggestion: a) If UK airspace is closed, how do you get from UK to Spain? Drive or take the train (with the "drive" option involving the Chunnel or a Dover-Calais ferry). My understanding is that those are all in extreme demand, with no tickets available for days to come. b) if you were somehow to get to Spain, unless their original UK-US airline happens to also operate Spain-US (unlikely), it would involve the purchase of new airline tickets at high last-minute fares.

To do otherwise would be even more of an outrage, and would displace far more passengers. Assume that flights are back to normal next week, and you had a ticket booked next week that you bought months ago, only to show up and be denied boarding because some other passenger that had a reservation two weeks ago needs to travel.
