There are some area's that use original music, but nothing like the scope of music that was originally composed for EPCOT Center. For me, that will always be the greatest use of music in a theme park.

When they rebuilt the area into Rancho del Zocalo, they added the small Zocalo Stage for just such performers. I don't see them often, but I think I've seen them performing there a couple times. And the Mariachi Divas can be found daily in DCA, roaming around the Pacific Wharf seating area. Not DL, but it's pretty close (geographically, at least)
