Tony's is alright, but really is sub-par Italian food at best, and I found it really salty both times I ate there. Liberty Tree has good food, and my family really likes it...I don't, but that is mainly because I don't eat red meat so my options are mostly limited to turkey and sides, so that one is just my preferences.

I think DL has far better options for both sit down and counter service. I do think there are good, even some great, restaurants at WDW, but most of them are in the hotels, spread out all over the resort, not in the parks. EPCOT is the only park I would really say has wide variety of good food.

Cafe Orleans has them, and I think the Royal Street Veranda might too. The Jazz Kitchen ones are the best though...I think I gained 5 pounds just thinking about them.

I disagree. I think you find that because you are much more familiar with DL and don't know where to look at the MK. Starting out at Adventureland and going clockwise. Counter service place offering stuff other than burgers or chicken nuggets...

    Adventureland
    *Tortuga Tavern
Burritos, Nachos, Taco Salads, etc. Generally pretty good, loses points becasue it is only open seasonally.

    Frontierland
    *Diamond Horseshoe
Hand carved Turkey sSandwich, Handcarved Pork Brisket, Tuna Salad on Croissant, Portobello sandwich.
Generally highly rated, again loses point because it is only open seasonally.

    Liberty Square
    *Columbia Harbour House
Broccoli/Peppercorn salad, Vegetarian Chili, New England Clam Chowder, Fried Shrimp Platter, Battered Fish Basket.
    Generally well regarded, open year-round.

    Fantasyland
    *Be Our Guest
All kinds of good stuff... too many to list. Not a burger or nugget to be found.
    Very highly rated, open year-round.

    Tomorrowland
    *Cosmic Rays
Soups, Salads, Rotisserie Chicken, Barbeque Pork Sandwich, and yes... a typical assortment of burgers and nuggets.
    Pretty good food, open year-round.

And similar to you, I would have a very hard time identifying counter service places at DL that offer something other than burgers and nuggets. It all depends on being quite familiar with the park in question.

I'm sure if you take the time to do some research, you'll be able to find good stuff anywhere. The fan-run Disney Food Blog has excellent reviews and menu overviews for every locaton on property, and is a great source for people looking for something a little more unique

That said, I'm not sure I'd put Cosmic Ray's on the 'good' list. I've eaten there a couple times, and it's always overcrowded, dirty, tiny tables, and the food isn't great (though we ended up with burgers and nuggets since that queue was the least long). My last visit was a chance for it to redeem itself from previous sins, and it seems like it's going to remain on the naughty list for a while longer

The atmosphere was always fantastic hanging out over the river and feeling a million miles removed from the world outside. But the food was pretty bad.

Now it's waaaay better. The fried green tomato sandwich is downright good. And even if you opt for a burger they're better than before. So now you can enjoy that superb atmosphere and have at least decent food too.

TL Terrace likewise has expanded the menu to things like portobello and veggie sandwich. Not haute cuisine, but much better than before. I think Ouimet started the trend of making sure even the "burger places" offered alternatives, and upped the quality all around.

My last trip I made sure to try some places I'd never been, and I was impressed. Carthay, of course, is just wonderful in every way; food, decor, service, the lounge with the PERFECT Manhattan... fantastic. But I pretty much expected that, provided some of the service glitches people talked about when it first opened would be gone (and I had no problem, anyway.)

Flo's had much better food than I expected, and of course the atmosphere looking over the Cadillac Range is great. Even the Cozy Cone surprised me with its "Chili Cone Queso" - really quite good for a quick snack pick-up. I didn't make it to the new Paradise Garden Grill, but I've heard good things.

I also did the Big Thunder BBQ; a little pricey, but it was all you could eat, the BBQ was better than expected (not exactly Kansas City, but for a theme park? More than fine), you got live music... I thought it was well worth it.
