I actually have a collection of 6 different recipes for Fantasia that I have scoured the internet for over the past couple of years. The funny part is that no two are the same, nor do all of them even list the same ingredients. What I am looking for is a bonafide recipe that lists all the original ingredients in the correct proportions. None of the recipes I have come across list any proportions at all and that is so critical to Fantasia. One quote I found on-line decribes it all. "It is FANTAstic. An unexpected symphony of flavors, textures, and colors, it is ambroSIA ... food of the Gods" Thank-you so much for trying, it still isn't what I am looking for but it's the thought that counts. : )

In 1997, Nestlé management decided to de-emphasize the Carnation ice cream brand. You might recall that this was when the Carnation Ice Cream Parlor was closed. Carnation as a brand was regulated to evaporated milk and non-dairy creamers (hence we still have the Carnation Cafe). I'd venture to guess that this is around the time that Nestlé purchased Häagen-Dazs. In 2002, Nestlé purchased a controlling interest in Dryer's (Edy's for those of you in the eastern half of the US) and made Dryer's the umbrella organization for its ice cream operations in north America. Fantasia ice cream went off into Yesterland when Nestlé and Dryer's management decided that it was not worth the effort to produce Fantasia ice cream. Considering that it was only sold at Disneyland (and later DCA), it had to be produced in small batches (well, small relative to the amount of other ice cream flavors). When managers at WDW refused to offer Fantasia ice cream in Florida, and when the pin promotion at Disneyland failed to boost sales, the fate of Fantasia ice cream was sealed. The only way I could ever see Fantasia making a return would be for Dryer's (which has its California connection in that it was founded in and is still based in Oakland) to open an ice cream demonstration facility in DCA and then use the location to make batches of Fantasia ice cream.*

However, I do not remember candied pineapple, which I hate. Maybe I picked it out. Within the last 2 months, we found Banana Nut ice cream by Dreyers at our store. It isn't even on their website now- whatever. I think you could get sort of close to Fantasia by taking vanilla ice cream and mixing in some mashed banana, and also add a bit of banana extract and a bit of yellow food coloring, take Dreyers Spumoni ice cream (seasonal flavor?), take out of the carton only the pistachio and cherry flavors if possible -no chocolate-, then take those and sort of layer it (softened) into a Pyrex loaf shaped dish. Then let it harden again and, when you scoop it, you would get some of all three flavors swirled together, but not BLENDED together. Oh yeah-and add gross candied pineapple and/or cherries if you must. Seems like this MIGHT kinda sorta come out similar? Just an idea. I don't know who makes a banana ice cream anymore - Schwan's used to have it, and my husband loved it, but last time he asked for it the driver said it was discontinued. If you can find banana ready-made, that would be best, I imagine. So, that's my 2 cents - worth at least that much??

That way I could get the layering effect you referred to without turning into one rather strange mix of flavors. Sorry if I didn't make myself clear in my first post.
