Originally Posted By Schmitty Good Vibes The best pizza I ever had was at a cheap pizzeria in a bad part of San Mateo called Aldo's. Everything was from scratch (except the tomato sauce was canned), and you would watch the bakers tossing the dough in incredible ways. We'd have parties of 50 or more people down there. Alas, Aldo past away and the kids couldn't keep up with his skills. Beside's Aldo's, one of my favorite pizzerias was, can you believe this, Chucky Cheese. O.K. every other CC I went to had lousy pizza, but there was one in Sunnyvale that had an awesome pizza with an incredibly thin crust and toppings and sauce that no other CC had. There was only one problem. It was so light that when me and my ex and my best friend went out, we'd have to order three extra large pizzas to call it a meal. That CC went out of business pretty fast, so I guess they were really splurging on the toppings. Other than that, I'm simple. Thin crust (hand tossed preffered), mushroom, olive, pepperoni, and if they are grilled, light onions. One thing I can't stand, and I don't know why, is green bell pepper. Someone posted before me that it's overpowering. I sure agree to that, but I use red bells in a lot of my recipes. Besides the m,o,p,o recipe, I do love a good Hawaiian pizza. I can't get into these heavy sauced garlic chicken thick crust maybe I should have ordered a bowl of stew pizzas. See you at Round Table!

I don't care for the "gimmicky" pizzas so much, though, like the ones with cheese in the crust, etc. I tend to stay away from the national chains but I'm not so much of a pizza snob I won't eat their stuff. We eat homemade pizza a lot. My partner makes a batch of pizza dough, enough for about six personal size pizzas, and we freeze it. I usually make the sauce. Very simple and unfancy: just crushed tomatoes, a bit of dry vermouth or white wine, olive oil, garlic. We make individual pizzas suited to our own tastes. Being from St. Louis, I'm most definitely a fan of St. Louis-style pizza. It has a very thin, cracker-like crust, and the sauce has a texture close to tomato paste. It's topped with provel cheese, a type of processed cheese that, unlike store-bought mozzarella, doesn't get stringy. It has a rather tangy flavor and creamy texture. The pizzas are round and cut into squares. (Yes, I know it sounds odd, but it's tradition.) http://imospizza.com By far my favorite kind of pizza is authentic Neapolitan pizza. There are about 20 pizzerias in the U.S. certified by the Verace Pizza Napoletana Association. The organization trains and certifies pizza cooks in making Neapolitan pizza according to very specific guidelines. http://www.verapizzanapoletana...ndex.htm Minnesota has a small, local chain of these pizzerias and one just across the state border in Wisconsin.
