Sure, Children know the difference, but I think most would be fine staying at HoJo's or a family suites with a decent pool. If the focus of my trip was on my kids and the Disney hotels were affordable then yes, I wouldn't hesitate to stay off site. In my case it's a lot easier for me to stay at DLH or GCH than for the average family.

Go less frequently then save and splurge when I do. But for those who are dying for a Disneyland fix, there are definitely cheaper options. Still though, even those days seem to be slipping away a little bit. The Harbor hotels have gone up, and those ticket prices...yikes.
