and, I'd like to tentatively sign up for Group A: 1 paper piecing and
    Group B: 2 photo mats - 2 per person

And I'd like to get a personal "OK" from smedley since it's Mickey Mouse that I plan to do for my character. ºoº

Generally, a photo mat should be sized to peek out from underneath a 4x6 photo. Typical is 4 1/2 by 6 1/2, but that is NOT written in stone. If you're doing stickers or other treatments you want NEXT to the photo, you should make it bigger in the one direction.

I ended up doing them so that the inner mat was 5.25" x 4.25", figuring if people had 4 x 6" they could trim 1" on one side, or if they had 3 x 5 they could position it a little higher or lower and then have a space to identify the photo with journalling if they want. Then the outer mat was 6 x 5."

    I think others did them to fit a 4 x 6 photo.

Whatever you want to do will work :)

Double matted to me means two layers, with the bottom layer bigger than the top, so that it's a "frame" for the top color.
