I used to book my ADR's about 6 weeks out, and even that isn't working very well any more. Disney has extended the front time for booking up to 180 days in advance, and some restaurants book up within days of that time. I'd be safe and book as far out as you can. Otherwise you risk an evening in Epcot with nothing available but the burgers and fries from the American Pavilion.

Granted, I don't know if they are extremely popular places, but I managed Ohana's on a Saturday night, Chef Mickey's for dinner, Crystal Palace and Resturantasaurus for breakfast. They even take reservations for Planet Hollywood, if you want.

I have to say, we were EXTREMELY lucky last year, we actually got a seating at coral reef same day, but it was a long wait. Other than that one time, its been a bust. I do have a funny story: on our last trip to Le Cellier, a gentleman offered me $100 bucks for my reservation slot. I declined however, it was our anniversary dinner, if not, I would have took the money and run!!!

It was counter service with burgers, McD's fries, and similar items. You then go hunt for a seat and call it a day. They might do something different for Breakfast than that, but I don't remember anything that would imply anything even close to needing a reservation.
