I found that the apple/apricot gives a very smooth texture and nice flavor. I also use fruit juice for the liquid. When I make pineapple upsidedown cake; I use the pineapple juice. Gluten free pastries do not store well at room temperature and should be frozen if not eaten right away. Sometimes freezing makes the texture better. Cookies end up being more like cookies and less like cake after freezing. You can also use a cake mix to make cookies by just adding the fat and eggs and no liquid.
