    Luau sounds fun!

    Hmmm, gluten free cupcakes. One of our grandsons is gluten free (eczema)and sometimes also dairy free. I've yet to find a cupcake in a store that isn't too sweet or mealy. I'm guessing you bake your own iamsally :) What flour do you use?

    Actually though, a Hogsdon (they are all natural) cake mix with a jar of baby food fruit and half the fat and 3 eggs makes a very good cupcake.

    When I make pineapple upsidedown cake; I use the pineapple juice.
    Gluten free pastries do not store well at room temperature and should be frozen if not eaten right away. Sometimes freezing makes the texture better.
    Cookies end up being more like cookies and less like cake after freezing.
    You can also use a cake mix to make cookies by just adding the fat and eggs and no liquid.

    Looking forward to the luau! I had a backyard luau on my 12th birthday :) Nothing amazing but lots of fun!!
    I'm not sure about the buried pig on the plane but may we please have baby back ribs?

    Right now we are rushing to leave for WA in the early AM. We will be tent camping on Orcas Island for 5 days and then traveling over to the middle for a bit; heading home for just two days before getting one last trip to Disneyland in before my PAP expires.
    This kind of thing was commonplace when we were much younger but I wonder what kind of shape we will be in a month from now.LOL
