The concept is pretty amazing, I agree.

Themed shops as well as specialty shops seem to be having a difficult time. Look at the many empty store fronts in the mall.

When the very same "themed" store is in every cute touristy shopping mall on the planet, it loses some punch. Big biz carbon copies EVERYTHING that works in an effort to save money while grabbing ours. Self inflicted destruction ensues. We want unique stores with unique merchandise. And it won't be easy to win back the consumer's trust. We are so used to the same crap in the same lame stores, that we won't be easy to lure in to browse even if you do cough up something decent.

The same stores everywhere is a big reason I strongly support locally owned stores. You are much more likely unique merchandise and merchandise appropriate to the location in locally owned stores. I could go on about local biz but it's off topic to a WDW forum.
